ice cream sandwiches

You can make easy ice cream sandwiches!

Get graham crackers and you favorite flavor of ice cream.
Let the ice cream soften and then slice it with a knife. You can make thick or thin slices. Freeze and then eat. The graham cracker get a little softer after a few days in the freezer. To keep them fresh you can wrap them in plastic wrap or put them in a zip lock bag. For a added treat you can roll the sides in mini m&m's or mini chocolate chips or anything you like. We did not do that this time but it is delicious!

pudding pops

A cool summer treat!

Things you will need:
  • instant pudding (any flavor or flavors)
  • 2 cups of milk
  • mixing bowl
  • blender or fork
  • chocolate chips (optional)
  • popcicle molds

Mix pudding according to package.

Stir or mix for 5 minutes.


Stir in chocolate chips, if you like.

Pour pudding mix into popcicle molds.

Place the lids on and place in freezer.

You can layer different flavors if you like.

Enjoy after they freeze. You may need to run under warm water so they will come out of the mold.
We made cheesecake with chocolate chips and layered vanilla and chocolate and chocolate chips!
(My cousin, Caroline, and I still have bbq sauce on our faces from supper!)

guacamole

FRESH GUACAMOLE
Ingredients:
  • 1 ripe avocado
  • 1 plum or small tomato
  • 1 tbsp finely chopped onion
  • 1 tbsp finely chopped cilantro
  • 1/8 tsp ground pepper
  • dash of salt
  • dash of lemon or lime juice
Follow the instructions below...

Gather the ingredients...
Slice avocado in half and scoop out the insides into a bowl.

Chop the tomato and place in the bowl.

Chop onion and add to bowl.

Chop cilantro and add to bowl.

Next add the salt, pepper and lemon juice.
Mix everything well with a fork. Mashing avocado.
Here is the finished product!

And Mom and I made some festive pico de gallo to go with our beef tacos!

canning tomatoes

These are the tomatoes that we picked from the garden yesterday.
We have Romas, Beefsteaks and Better Boys.


Here is the pressure cooker and jars we cleaned.


Two of my great grandmothers have given us jars.
One box has the price of $2.62 on it!
I am adding a tsp of salt to each jar.


We put the tomatoes in boiling water for 30 seconds to hep the skins slip off easier.
Andrew helped for a while. He put the peeled tomatoes in the jars.


When you take the tomatoes out of the boiling water you place them in very cold water to stop the cooking.


Once the jars are full and the air is out we wipe the rims of the jars clean and place a lid and top on each jar. Next we place them in our pressure cooker with 2qts of water and lock the lid. We cook them at 5lbs of pressure for 10 minutes.


Once we were finished we had to wash all the dish and supplies.


We ended up with 14qts of Romas and 7qts of Beefsteak and Better Boy mixed!


We will use these tomatoes in the winter for chili, salsa and spaghetti sauce!

Aubrey has been asking if she can have a blog for some time now. This week it dawned on me that she could do one revolving around cooking. She loves to not only help me in the kitchen but also loves to do things on her own as well.
